If you’re following us on social media, you saw the beautiful peach harvest we had this year! The trees were planted four years ago during WALC of 2022 and this year was our first harvest from these trees. We enjoyed the peaches fresh, frozen, as jam, and also as pie! Included below is Tara’s peach pie recipe if your mouth is watering!

Makes 1 pie

The Crust

Ingredients:

  • 3/4 cup margarine
  • 2 cups flour
  • 1/4 teaspoon salt
  • 1/2 cup cold water

Directions

  1. Preheat oven to 350 degrees F or 175 degrees C
  2. Mix together the salt and flour
  3. Mix the butter into the flour and salt mixture until the margarine is in small pieces, the size of beans
  4. Wet the mixture with enough water that it sticks together and can be formed into 2 or 3 balls
  5. Spread flour on the counter and on a rolling pin
  6. Roll out each ball in a circle 3 cm larger than your pie pan
  7. Line the pan with your dough, reserving a circle of dough for the top of your pie

The Filling

Ingredients:

  • 4 cups of peaches
  • 1/2 cup of sugar
  • 1/2 cup of flour

Directions:

  1. Mix the fruit with the sugar and flour
  2. Fill the pie with the fruit mixture
  3. Top with the remaining dough and seal the edges
  4. Bake for 30-45 minutes at 350 degrees Fahrenheit or 175 Celsius
